New owners A Rule of Tum to reopen Gloucester Docks eatery in July
Gloucester Docks eatery Dr Foster is set to reopen on Friday 12 July as a gastropub, with new owners A Rule of Tum bringing a ‘fresh and reimagined concept’ to the venue.
Founded in 2013 by brothers Edwin and Dorian Kirk, A Rule of Tum is the brand behind the Chefpreneur business model, whereby talented chefs are taken on to run and own a small share in their own restaurants.
For Dr Foster, this will be Callum McDonald, who’s worked with Michelin star chefs across the country and now takes a three per cent stake in the pub.
Callum and his team are putting together a diverse menu of brunch dishes, evening meals and pub classics, with plenty of vegetarian, vegan and gluten-free options.
The pub will serve beers and ciders from Deya Brewery, Wye Valley and Gloucester Brewery, with meats from Heggie’s Butcher in Hereford.
Bread will come from Peter Cook’s Bread in Worcestershire, and fresh produce will be supplied locally.
As for the venue, it’s split across two floors, with a seating capacity of 90 in the bookable restaurant upstairs and 150 downstairs – including an outdoor courtyard and dockside seating.
